For some reason I've always loved Pancake Day; it's probably because it's the only chance I get each year to sit down to some pancakes served with the traditional lemon and sugar. Who cares that I'm not about to begin a Lenten fast and so don't have any need to use up my eggs and butter; I just like this once a year opportunity to have pancakes.
